Created another Croquembouche for a client over the weekend. This one conscisted of 12o choux with a vanilla creme patissiere filling sitting on a Nougatine base and finished with spun sugar.

Thank you for baking the croquembouche for my party on Sunday, which was a key component of its great success. It looked spectacular and tasted superb, and, as is probably frequently the case, was a talking point for the rest of the afternoon. Seeing you construct it made me realise how artistic a production it is; amateurs such as my wife and daughter wouldn’t have stood a chance of making anything in the same league.
